We made a reservation for 2 at 21:30 on Saturday! I was lucky to find an opening through Tabelog. With our stomachs growling, we were fully prepared for the meal. Starting with the appetizers, we moved on to the sushi! The appetizers were creatively arranged with a modern twist, leaning more towards Italian and French styles rather than classic Edomae. The sushi was absolutely delicious! The firmness of the rice was just perfect, melting in my mouth. You can really feel the dedication to Edomae techniques in each piece! The person I was with asked the chef a lot of questions, and he was more than happy to share his knowledge! The hospitality was top-notch!
