I visited Petit Restaurant Bouquet de France for the first time.As a long-established French restaurant in Aomori City, I had been wanting to try it, so I made a reservation for lunch. The best way to reach the restaurant is by taxi, as the bus and train services are infrequent. The lunch course included:- Sea Urchin and Tomato- Abalone and Flan- Flatfish- Shima Ebi and Onion Espuma- Zucchini with Scallops- Isinagi with Snap Pea Sauce- Venison- Peach and Mascarpone Ice Cream with Champagne JellyThe sea urchin and tomato dish was served as a cold jelly, making it quite refreshing. The abalone and flan showcased the flavor and texture of the abalone, complemented by the subtle sweetness of the flan. The flatfish was served with a cold sauce, and its texture was smooth rather than the typical firm bite, pairing well with the herbs and vegetables. The Shima Ebi and onion espuma combined the sweetness of the shrimp and onion, creating an elegant flavor. The zucchini dish featured scallops inside the flower zucchini, harmonizing the flavors of both ingredients beautifully. The fish dish, Isinagi, had a crispy skin, and when paired with the snap pea sauce, it enhanced the texture and umami of the white fish. The main dish of venison had a moist texture, allowing the flavor of the meat to shine through rather than being overshadowed by the sauce. For dessert, the sweetness of the mascarpone ice cream stood out, and when combined with the peach and champagne jelly, it created a refreshing balance of flavors.Overall, the dishes emphasized the natural flavors of the ingredients rather than relying solely on the sauces, reminiscent of Japanese cuisine. If the flavors were a bit more pronounced, they would align perfectly with my taste. The price for the lunch course is around JPY 10,000, suggesting it caters more to out-of-town guests than local residents. It was a great meal!
