The undisputed No.1 tonkatsu restaurant, "Yoda," shines as the reigning champion, surpassing "Seizo." After overcoming the challenge of securing a reservation (only 4 seats available for lunch and dinner), I finally made it here.While it’s not a strict rule, I checked the delicious eating method via the QR code, and it seems they have various unique practices. For instance, each piece of tonkatsu is seasoned individually, the cabbage isn’t dressed all at once, and the miso soup is served at the end. Indeed, the routine was that the tonkatsu arrived first, followed by the rice a little later, and finally the miso soup.Now, back to the main topic.LYB Pork (Ruibi Pork) Loin - *my first choice when making a reservation*The golden, shimmering crust is light, with each breadcrumb standing out. The thick-cut loin is cooked slowly at a low temperature, presenting a beautiful pink color, and the high-quality fat is still overflowing. The seasoning options include sauce (medium thickness, aged), soy sauce, salt, wasabi, and lemon. Following the advice, I started from the right end, where the fat content is lower. Wow, this is incredible! The sweet fat bursts forth with each bite, bringing immense joy! And what is this tenderness? The salt enhances the meat's natural flavor, while the soy sauce and wasabi add a delightful accent. The sauce is definitely meant to complement the rice. The rice is fluffy and has a chewy texture, while the miso soup carries the aroma of mushrooms. It was an absolutely divine experience!The attentive service throughout my visit was also remarkable, transforming the entire experience from entry to exit into a blissful space. I would love to return as soon as I can secure another reservation!
