It had been a few years since my last visit, and I was reminded of the high quality of the sushi rice. The nigiri, with its clear contours reminiscent of Sukiyabashi Jiro, strikes a perfect balance—not too firm, and beautifully harmonious with the toppings. For fans of the sister restaurant Aozora, this place will undoubtedly resonate with you. The standout was definitely the sardine. The richness, aroma, temperature, and the way it paired with the rice were all perfect—truly among the best sardines I've ever had. From start to finish, the meticulousness and consistency of the course structure were impressive. The dish of silky mozuku seaweed served in between was a delightful palate cleanser. The final tuna roll, the additional gourd roll, and even the melon at the end all contributed to a high level of satisfaction, making me genuinely want to return to this sushi restaurant.
