RevisitI visited on a weekday at 21:00. I entered at 20:50 with no other customers present. While receiving an explanation of today’s vegetables, I made a reservation for my next visit...【Fried Dishes Part 1】① Ebi Toshi (Shrimp Toast) ② Wrapped Shrimp 1 ③ Wrapped Shrimp 2 ④ Kisu (Whiting) ⑤ White Eggplant (Kyoto) ⑥ Shiitake (Yamagata) ⑦ Clam (Kashima) 【Intermission】 - Cucumber and Eggplant with Umeboshi 【Fried Dishes Part 2】⑧ Two Types of Corn (Pearl, Gold Rush) stacked ⑨ Wrapped Sawara (Spanish Mackerel) with Shiso ⑩ Asparagus (Yamagata) ⑪ Flower Zucchini: Additional ⑫ Honyanagi (Shishamo): Additional ⑬ Botan Ebi (Sweet Shrimp): Additional ⑭ Scallop Wrapped in Seaweed ⑮ 1.5-Year Aged Makuin (Tokachi) ⑯ Anago (Conger Eel) 【Rice】 - Spicy Cod Roe Wrapped in Seaweed - White Rice - Clam Red Miso Soup A whirlwind of frying for just over 2 hours... With 3 additional items and 3 glasses of Omakase sake, the total came to JPY 31,000. Here are my impressions of the dishes.The most impressive were ⑦ and ⑮. ⑦: About two weeks ago, I had clams with a shell length of 9.5 cm at a different restaurant, but the concentration of umami here was on another level... ⑮: I expected the frying time to be around 60 minutes, but it exceeded my expectations at 70 minutes. The starch had gelatinized, appearing semi-transparent, which was surprising. I had fried potatoes (Inca no Mezame, 1-year aged, 60 minutes frying) twice before the relocation of a silver medal restaurant in Osaka, but the appearance and flavor here were far superior.
