Yatsugatake Esaki offers a stunning space characterized by large glass windows that open up to nature. Here, Chef Esaki operates solo, serving only an "Omakase Course (JPY 20,000)." With just one group (up to 6 people) allowed for lunch and dinner, it truly provides a luxurious and private dining experience.On this occasion, I visited for a mini wine gathering with friends, bringing our own wine. Despite being a one-man operation, the dishes were meticulously crafted and truly outstanding.**Course Details:** - **Appetizer:** A rich soup made with sea urchin from Rebun and locally sourced corn. The umami of the broth harmonizes beautifully with the richness of the sea urchin and the sweetness of the corn.- **Salad:** A delightful mix of shrimp, surf clam, figs, and local vegetables. The standout feature was the exceptional texture, highlighting the quality of the ingredients.- **Soup:** A natural sweetfish puree. The aroma and deep flavor of the sweetfish permeate the dish, creating a delicious experience.- **Sashimi:** Slices of abalone from Rebun and sea bream. The contrast in texture and flavor was remarkable.- **Simmered Dish:** Simmered kinmedai (golden eye snapper). Perfectly cooked and seasoned.- **Rice:** Rice with grouper. A luxurious finish packed with umami.- **Dessert:** A dessert made with local peaches.It was a truly indulgent experience, feeling like I had the skills of a three-star chef all to myself. The combination of delicious food, our own wine, and engaging conversations with the chef made for a genuinely enjoyable time. I would love to visit again!
