The soba here is absolutely delicious...Hot MorisobaThis restaurant is a renowned soba shop featured in the Michelin Guide.I became completely hooked after seeing it introduced by Koyabu-san (@koyabukazutoyo_shinkigeki) on YouTube.This is their signature dish, the "Hot Morisoba."First, I add a bit of the rich dipping sauce to a raw egg and mix it with some condiments.Of course, the soba itself is already incredibly tasty.The texture is just right, with a perfect bite and an amazing aroma of buckwheat.Dipping it in the egg mixture takes it to another level.The balance of the dashi and the creaminess of the egg is simply perfect.After finishing the soba, I pour the hot soba broth into the egg dipping sauce.It transforms into a delicious egg drop soup with a rich dashi flavor.This finishing touch is the best.I highly recommend everyone to give it a try!
