I revisited a hidden gem restaurant located at the entrance of Mitsui no Mori in Tateshina. Since I visited around the same time last year, there were some overlapping dishes, but the meals, prepared with care using local ingredients from Nagano and cooked over firewood, were infused with a delightful smoky aroma, offering a refined and delicate taste that was truly exquisite. The pairing with local Nagano wine was also excellent. The confit of wild sweetfish, pasta made with egg mushrooms, and the long-aged Shinshu Yamakura beef were absolutely outstanding. I definitely want to come back!
