My first visit to Dogo Onsen was a culinary delight. I made a reservation to enjoy some delicious local cuisine.The restaurant focuses on local ingredients, showcasing the blessings of the sea, mountains, and rivers through carefully crafted and delicate dishes. You can really feel the effort that goes into each preparation.The charcoal-grilled Isaki (Japanese grunt) was exceptional, and the Ayu (sweetfish) had a unique fluffy texture I had never experienced before.Every dish I enjoyed at the counter was truly moving. I had a wonderful time chatting with the chef and other guests.
