I have been visiting Sushi Ikkou since its days in Hokkaido, but I had never tried their specialty, the shako (mantis shrimp) nigiri, until now! The dedication is evident as Chef Kudo personally flies out to select and procure these ingredients. It's rare to find shako at high-end sushi restaurants, and the fact that they go through the effort to source and prepare it during its spawning season is truly commendable. You can really feel their passion for serving delicious food to their customers. The taste was, of course, exceptional. It had a rich, creamy flavor that was a delightful first experience. This is truly unique to Sushi Ikkou. It was fantastic! Thank you for the wonderful meal!
