Reservations for slots from Wednesday to Saturday open at 11:00 on the 1st of each month. Sunday slots open at 11:00 on the Friday of that week. You need to decide your order at the time of reservation, so it's essential to have your choices ready.Order:- Tonkatsu Set Meal - LYB Pork Loin - Rice - Miso Soup - Nukazuke (pickled vegetables) - Melon - Green Tea - Ebisu Small BottleI had included ribs in my order, but I was informed at the start that they were out of stock, so I would be served the LYB pork loin instead.While waiting, I enjoyed a beer. About 30 minutes later, the tonkatsu arrived! The batter was white and looked incredibly light! I was instructed to start eating from the right side of the loin, and I followed that direction.First, I tried the fatty part on the right edge without any sauce! As expected, the light batter and the fat melted in my mouth, delivering an exquisite taste. Just this one piece made me feel, "Ah, this is on a different level."As I continued eating from the right side, I tried the seasoning salt and wasabi! The salt was coarsely ground, and even so, the fusion with the meat was delightful, with the saltiness perfectly matching the sweetness of the fat! Personally, I was hooked on the wasabi! This was my first time trying it, and the low melting point of the LYB pork fat paired excellently with the flavor and spiciness of the wasabi!I also tried the medium-thick sauce and the ripe sauce! Both sauces had a rich consistency and sweetness that complemented the meat beautifully!But it wasn't just the tonkatsu that impressed me. The freshly cooked rice was fluffy and sweet, and the miso soup, made with nameko mushrooms, had a comforting homemade taste. The quality of the nukazuke was also high, offering another taste of home.After finishing everything, the melon and green tea arrived. The melon was sweet and juicy, showcasing the high level of quality until the very end!Despite being a one-person operation, the service was consistently attentive, making for a pleasant dining experience throughout!The deliciousness made me genuinely want to return, so I definitely plan to visit again.It was a great meal!
