I made a reservation and visited on a weekday afternoon. It's quite deep in the mountains, so securing a reservation is relatively easy. There were a fair number of customers, including some dining alone.What I was particularly looking forward to was the bear meat. I heard that local hunters process the bear meat at the restaurant. It had no gamey smell at all; instead, it was a wonderful dish that showcased the rich umami of the meat. Other dishes also featured bear fat and rice cooked with the innards, which beautifully expressed the unique culinary world of L'evo throughout the course.Reservations can be hard to come by, but it would be amazing to stay here. If you visit for the day, you can't enjoy any alcohol... I believe it's worth coming to Toyama just for this experience. It was truly exceptional.
