Tsunokamizaka Koshiba is located in a quiet corner of Arakicho, Yotsuya.The address is 15 Arakicho, Shinjuku-ku, Tokyo, in the Sanshato Yotsuya building, where you can enjoy meticulously crafted Japanese cuisine made with seasonal ingredients in a serene atmosphere typical of Arakicho.On this occasion, I opted for a course meal, and from the very first appetizer, the delicate craftsmanship was evident. The dish adorned in cherry blossom hues was visually spring-like, beautifully harmonizing with the dishware. The following soup showcased an exceptionally refined dashi, subtly enhancing the umami of the ingredients.The sashimi was primarily composed of white fish, allowing for a natural enjoyment of the varying textures and sweetness. The grilled items, with their added char, offered a pleasant aroma, and the pairing with wasabi and sea urchin was exquisite.The oyster dish stood out with its fragrant batter and concentrated umami, perfectly complemented by the accompanying sudachi, which left a clean aftertaste. The grilled dishes were expertly cooked, achieving a wonderful balance of richness and aroma, showcasing the inherent qualities of the ingredients.The hassun (seasonal appetizer platter) was rich in seasonal flavors, with each item presenting a different character. Incorporating bamboo shoots, shellfish, and wild vegetables of the season, it was impressively cohesive as a whole.Even the final sweet course was flawless, with a citrus-based dessert that was refreshing and left a pleasant aftertaste.Not only was the food exceptional, but the hospitality from the head chef was also remarkable. The right balance of distance and a warm atmosphere allowed for a comfortable dining experience throughout. The attention to detail in the dishware and presentation reflected a strong aesthetic sense, making it a place where one can thoughtfully savor the seasonal essence of Japanese cuisine.It was a great meal!
