There’s a line of over 20 people waiting outside the restaurant. Yet, not a single person looks bored. The excitement of "Today is Yassan" unites everyone in line.At 6 PM, the noren (curtain) rises, and the young master personally welcomes us.The sound of geta (wooden sandals) echoes, lively shouts fill the air, and the smile of the head matron envelops the entire restaurant. From that moment, this place transforms from a mere "meal" into a "experience."Starting with a chilled soup of yam and oxtail, the flow continues with cucumber, meat sashimi, grilled dishes, stews, and vegetables, each plate filled with the essence of Yassan. They are all unforgettable, despite their simplicity. It feels as if each dish is enchanted.This time, I savored liver, tongue, outside skirt, knuckle main muscle, and the famous oxtail stew. The finale was Gohan (rice). There was no flaw in every last bite.Kyoto has many famous restaurants, but this energy, this warmth, this atmosphere is unique to Yassan.I am overwhelmed with emotion.In Gion, there is a precious place I want to return to again and again.
