My first visit to Teuchi Soba Jiyu San!I quenched my thirst with a bottle of Heartland beer and enjoyed an assorted platter of seasonal vegetable dishes as my accompaniment!The side dishes, made with plenty of seasonal vegetables, were all delicately prepared and rich in flavor, including items like fermented pickles!Even though these dishes were vegetarian, they were incredibly satisfying, showcasing the chef's meticulous craftsmanship!For the soba, I had the chance to compare the seiro and inaka soba!The thin seiro soba was fresh and, as I slurped it up, a refined aroma filled the air!With its smooth texture, the crisp and dry dipping sauce enhanced the flavor of the soba beautifully!The inaka soba featured thick, rustic noodles that were dark and hearty.
