I finally made it to HATSUNEZUSHI, and miraculously managed to secure a reservation! I’ve been excited for this day for months, and I must admit, expressing my feelings is a bit embarrassing, but I truly was thrilled to be here!I thought I had gained enough experience with counter sushi before visiting, but wow! HATSUNEZUSHI is simply the best! I wanted to write a refined review, but I ended up just expressing my usual excitement (laughs). Everything was delicious!It’s hard to get a reservation, but I’ve decided I must come back many times before I die (laughs). I may not understand all the intricate details, but every dish was delightful! Especially the sea urchin. I find sea urchin quite challenging, but this one was perfectly balanced—no strong aftertaste, just a hint of sweetness, and not sticky at all. I can only describe it as delicious!Of course, all the other ingredients were fantastic too! Personally, I found the soup served as a palate cleanser to be incredibly tasty!The young chef who prepared my sushi was overflowing with hospitality, which truly impressed me! They were quick to notice and considerate of my needs. I realized that true professionals excel in every aspect!
