"The true value of a renowned restaurant is revealed after someone has left."This was my first visit to SUGALABO V since Chef Nagahama's departure.When a long-time supporter of the kitchen leaves, it’s natural for the dishes to change. It’s easy to compare with the past, but a restaurant isn’t meant to preserve its history.Once again, the food was delicious.The selection of ingredients, the cooking techniques, the layering of sauces, and the signature elegance of SUGALABO are all still present. Including the Louis Vuitton ambiance, the unique experience that can only be found here remains intact.However, inheriting something that is already complete and creating your own dishes from it are two entirely different things.It’s delicious.But there’s still more to come.In fact, that’s perfectly fine for now.Rather than chasing the shadow of a great predecessor, I hope to see the unique character that only the new SUGALABO V can offer.When I visit next time, I look forward to being even more surprised than today.A renowned restaurant becomes dull the moment it reaches completion.
