As I climbed the stairs, I was greeted by a calm space that exuded a sense of wabi-sabi.Known for serving Edomae sushi in Omiya, the atmosphere allows you to enjoy sushi at a leisurely pace.Upon tasting the dishes, I found the overall experience to be classical, with a carefully constructed course.The flow from appetizers to nigiri was smooth, allowing me to savor each dish thoroughly.Among the highlights was the kohada (gizzard shad), which truly embodied the essence of Edomae sushi.The acidity of the vinegar was pronounced, harmonizing beautifully with the subtle sweetness of the fish, creating a delightful balance in my mouth. It's wonderful to experience such traditional craftsmanship in a single piece.The nigiri had a great balance between the toppings and the rice, with just the right amount of acidity in the rice.
