I finally visited Kabuto, which I had been looking forward to. I started with 8 skewers, followed by grilled eel served plain and grilled eel with sauce, along with a liver soup. I learned that first-time visitors are served farmed eel. The skewers were interesting, allowing me to try various parts and experience different textures. The plain and sauced grilled eel are prepared using a Kansai-style technique, but honestly, my expectations were too high regarding the richness and moistness of the eel, and I felt I couldn't quite meet those expectations. The homemade cold tofu was delicious. Since eel is not in season during summer, perhaps I should have tried it in winter.
