At a high-end Japanese restaurant with a counter, I always make sure to reserve a seat at the counter. This time, there were nine seats: two for regulars on the left, two for us, one for another regular, and two for foreign visitors. We had the best seats right in front of the chef, where we could see his skillful cooking. However, it was unfortunate that the regular who came alone monopolized the chef's time. While we could enjoy discussing the dishes, the conversation with the chef was mostly about acquaintances of the regular... The chef had no choice but to engage. I appreciate the effort. I have a few "regular" places myself, but I wish for a bit more consideration from the regulars. The regular on the far left was engaging with the younger patrons and didn’t monopolize the chef, which was a wonderful display of being a good regular. The ingredients, seasoning, and presentation were truly outstanding and delicious! No complaints at all. The chef was also very considerate, initiating conversations, which I appreciated. This restaurant truly deserves its Michelin star. For the final rice dish, we could choose as many as we wanted from five options, and we could select from small, medium, or large sizes, with unlimited refills. Even the dessert, watermelon, was available for seconds! It was the best!
