Located just a 10-minute walk from Higashi-Nagasaki Station, this renowned restaurant sits quietly in a residential area.I aimed to arrive shortly after opening on a weekday, visiting a bit early at 11:00 AM. There were chairs set up outside for waiting, and surprisingly, the time spent reading while waiting for the opening felt pleasant and never boring. When the restaurant opened at 11:30 AM, I was smoothly guided in as the first on the list.On this day, I simply wanted to enjoy the soba itself, so I ordered two servings of seiro.The seiro that arrived was surprisingly fresh and had a delightful texture, despite being 100% buckwheat with no added flour. The homemade buckwheat flour was incredibly flavorful, and the moment it touched my palate, a refined aroma and gentle sweetness spread throughout. The rich umami of the broth paired perfectly with the sharp, soy sauce-based dipping sauce, enhancing the sweetness of the soba to its fullest.I skillfully slurped the first serving, and the second was served at just the right moment. I was able to savor the true essence of hand-made soba until the very end.With its sophisticated and calming atmosphere, this is a wonderful restaurant well worth the visit.
