In May, as we start to feel the early summer, Noguchi Taro offers a refreshing lineup that differs slightly from spring. With dishes like young sweetfish, first bonito, white sweet sea bream, and hamo (which was made into a katsu sandwich), along with a soup dish and shark fin green curry, it was truly a time that transcended traditional Japanese ingredients and cooking methods. It was consistently exciting and full of surprises.
