This restaurant has been on my mind for a while. It is well-known for sourcing fish from "Sasue Maeda Fish Shop," a favorite among many renowned establishments.Finally, I was able to visit after receiving a recommendation from "Chisou Suitaku Ichiju" in Hiroshima.The course menu features seafood as the star from start to finish. Rather than just serving high-quality fish, they skillfully highlight each fish's unique characteristics, balancing cooking techniques, acidity, aroma, and texture to create a harmonious dish.The horse mackerel, particularly memorable, was marinated in sansho oil and paired with beets, red onion, and finger lime, served atop a bed of boiled kintoki greens. The thick, firm texture of the mackerel combined with the popping acidity of the finger lime was exquisite.The knife fish was prepared as a double-layered fritter. It was fluffy yet thick, perfectly complemented by a tartar-style sauce made with egg, onion, and capers, along with the acidity of fermented tomatoes.The squid was sautéed and then infused with smoky flavor from charcoal, served with a grainy mustard sauce made from white eggplant and ham-natto. They managed to keep a chewy texture while ensuring it was thoroughly cooked.Another interesting dish was the fish wrapped in pastry. Freshly caught shirasu (whitebait) and sautéed onions were wrapped in shiso leaves, then encased in pastry and baked. The outside was crispy, while the shirasu inside remained slightly undercooked and moist. The accompanying cream sauce made it a fantastic dish.For the finale, we enjoyed a risotto made with abalone from Shizuoka. It was finished with abalone liver, mixed grains, and a sprinkle of pickled plum powder for an accent. The umami of the abalone lingered until the very end.Dessert featured Fujieda mango with gyokuro sorbet and homemade kuromoji oil.This experience showcased the local ingredients from Yaizu, the fish from Sasue, and Chef Nishi's skill and creativity. It was clear that they thoroughly consider "how to prepare this fish to make it taste the best."Traveling all the way to Yaizu just to enjoy the fish here is absolutely worth it.
