I visited with very high expectations, and they were easily surpassed.Having been to various sushi restaurants, I can confidently say this one stands out.The overall quality—from the dishes and sushi to the ambiance and service—is exceptional.What impressed me the most was the handling of summer ingredients.In summer, the condition and fat content of the fish differ from winter, and it’s not just about serving good quality fish.The chef skillfully assesses the unique characteristics of seasonal ingredients, adjusting the temperature, preparation methods, aging, and seasoning to achieve the best possible results.The herring roe had a pleasant texture without being overly seasoned, drawing me in right from the start.The sushi was also remarkable; the delicate fish had a perfect balance of aroma, fat, and acidity.While the fish was prominent, the rice didn’t overpower it, creating a harmonious sensation in the mouth.The shellfish stood out for its umami and texture, while the sea urchin was rich yet light.Each piece had its own direction, making me naturally curious about what would come next.The appetizers were also of very high quality, giving the impression that the entire course expressed the essence of the season rather than just focusing on sushi.The grilled dishes were expertly cooked, bringing out the ingredients' aromas and fats without leaving a heavy feeling.I enjoyed every bite without feeling fatigued.And then there was the hospitality.Unlike the tension often found in high-end sushi restaurants, this place had a refined atmosphere while remaining comfortable.The explanations of the dishes and the distance in conversation were just right, creating an environment where I could genuinely enjoy my meal.It felt less like "I had delicious sushi" and more like I experienced a complete culinary journey.I definitely want to return to this restaurant in a different season.
