This is a place where even those in their 80s can savor the true essence of Kyoto cuisine right here in Kanto!Having visited the three establishments of the esteemed Takasō Nionmatsu's disciple, Hozumi, as well as Ikegami in Kagurazaka and Kiryu Chisō Ikada, I felt that each place consistently highlights the quality of seasonal ingredients, perfectly seasoning them with dashi and traditional Japanese condiments. The core principles of Kyoto cuisine remain unwavering across all these restaurants! They challenge themselves with new combinations of ingredients and seasonings without breaking that concept, truly embodying the essence of Japanese cuisine.
