Visited in May 2026.Every dish and sushi was incredibly delicious.Highlights included:- Sole (Mako-garei)- Young Yellowtail (Tsubasu)- Monkfish Liver (An-kimo)- Stuffed Spear Squid (Komochi Yari-ika)As for sushi, I particularly enjoyed:- Horse Mackerel (Aji)- White Shrimp (Shiro-ebi)I found the white fish at Josuke to be especially tasty.Strictly speaking, I don't think Tsubasu and Aji are classified as white fish. Personally, I consider the narrow definition of red fish to be tuna (Maguro) and bonito (Katsuo).
