I was able to enjoy my most anticipated spring eel of the year. The white grilled eel was from Amakusa, and the kabayaki was from Lake Hamana. The fat was gentle, reminding me that it’s a river fish. Spring eel has a clear aroma and a refined flavor that I really love. I’m looking forward to next year!
