Every dish showcased the quality of the ingredients beautifully, but what truly captivated me was the "Aburi-yaki" (grilled dish). On this occasion, I enjoyed Isaki and Sawara, both of which had a crispy, fragrant skin. The moment I took a bite, the rich umami burst in my mouth, bringing a smile to my face. This is a fantastic restaurant where you can fully indulge in the seafood of the Setouchi region. If you visit Dogo, I highly recommend stopping by; it has become one of my favorite places.
