I can only describe it as wonderful. The chef trained in Tokyo and skillfully combines Edo-style techniques with local ingredients from Lake Biwa, creating a delightful hybrid of Edo-style and local flavors. Although it has the style of a neighborhood sushi shop, it aims for the pinnacle of traditional sushi. I had a great time enjoying the chef's explanations while appreciating the solid techniques. I noticed that some ingredients were sourced from outside the local area, specifically from Sasuemaeda Fish Shop, which is quite rare as they only supply to three restaurants in Kansai: Kiyama and Yoshoku Ogawa. The taste of Yaizu can be found here as well. Fifteen pieces of sushi for JPY 8,800 is an unbelievable price for Tokyo, especially considering the high quality. I also ordered a few appetizers. I will definitely be back!
