If you love eel, you must visit Matsumoto. Yamasei is a representative eel restaurant in Japan. Here, the eel is grilled without steaming, resulting in a tender texture that melts in your mouth, thanks to their precise grilling technique. Additionally, they have dug a well in the basement to draw Matsumoto's underground water, which helps eliminate any unpleasant odors. The focus on achieving the highest quality for each dish is evident. The cold moringa served at the beginning, combined with wasabi, made me confident that the upcoming dishes would be exceptional. The ambiance and service were outstanding, and I appreciated the warm send-off. The owner has experience from the renowned Akasaka restaurant, Seine. I hope to visit again soon.
