The reason for my visit to Ehime was to try Kuruma Sushi. This well-known sushi restaurant ranks among the top in Ehime, and it was my first time here. They offer a variety of local ingredients, which is always a delight for out-of-town guests. The abalone with liver sauce was incredibly smooth and ranks among the best I've ever tasted. ✨ The way they cut the squid shows their skill, resulting in a beautiful presentation; you can really appreciate how the cut affects both texture and flavor. The blue crab from the Seto Inland Sea was packed with sweet crab meat and rich innards, making it a true treat! The Ise lobster was impressively large, and the combination of grilled meat with miso created an ultimate dining experience. The two pieces of fatty tuna nigiri were exceptional; I had no idea such great tuna came from Sakai Port…♡ The local sea urchin had a deep, rich flavor, and I could truly feel the quality of this renowned establishment.
