Just a short walk from Nihonbashi Station, this is a tempura restaurant.I was invited and sat at the counter.What I ordered:- Omakase Course (JPY 16,500)- 3 Additional Dishes (JPY 9,900)- Bottled Beer (JPY 990)Total: JPY 27,390The course included 13 types of tempura, a palate cleanser, and a meal.With the 3 additional dishes, I was completely full.The batter is unique.It’s thick yet has many air bubbles, making it lighter than it looks.The crunchiness is delightful, and I felt like others could hear it too.As I chewed, it had a crisp texture. The oil was well-drained, so it didn’t feel heavy.That said, it does absorb quite a bit of oil, so towards the end of the course, there was a noticeable richness.The thick batter coats the ingredients well, making it harder for moisture to escape compared to other tempura places.As a result, when you take a big bite, steam rises from within.Continuing to chew, my mouth was filled with warmth.The deliciousness of the hot ingredients, the aroma of the steam, and the airy batter create a wonderful balance.It’s truly one of a kind.The additional (12) flower zucchini was a masterpiece.The subtle bitterness of the zucchini flower spread throughout my mouth with the steam, creating an indescribably precious experience.Also, the (7) clam was incredibly delicious.The thick batter coated the clam well, keeping all its flavors intact.As I chewed, the umami was perfectly captured by the batter.The quality of the clam itself was outstanding—quite large and meaty, with a clean flavor.Here’s what I had that day:(1) Ebi Toshi (Hatoshi)(2) Rolled Shrimp 1(3) Rolled Shrimp 2(4) Kisu(5) White Eggplant (Kyoto)(6) Shiitake (Yamagata)(7) Clam (Kashima)(8) Palate Cleanser: Cucumber and Eggplant with Ume Paste(9) 2 Types of Corn (Pearl, Gold Rush) Stacked(10) Sawara with Shiso(11) Asparagus (Yamagata)(12) Flower Zucchini: Additional(13) Shishamo (Japanese Smelt): Additional(14) Botan Ebi (Sweet Shrimp): Additional(15) Scallop Wrapped in Seaweed(16) 1.5-Year Aged Meijin Potato (Tokachi)(17) Anago (Conger Eel)(18) Tempura Rice Bowl with Clam Red Miso SoupThey ask if you want to add dishes during the course.Even if you feel fine at that point, heavier items like potatoes, anago, and rice come towards the end, filling you up more than expected.Also, the batter seems to get thicker towards the end, which surprisingly becomes quite filling.Next time, I’ll be mindful of my pacing.
