A medley of Purple Viking, Kennebec, Yukon Gem, and sweet potatoes is bathed in a warm, comforting broth flavored by its skins. The topping is sunflower seeds and crispy sunchoke chips. Though you can’t see it, there’s also an oyster hidden in this dish. The potato course here is always delightful and delicious without exception πŸ‘πŸ₯”

A wonderful dish full of sweet ribbons of succulent carrot. Buried underneath is a mound of incredible pecan mousse. Save a piece of bread, if you have any left, and β€œfare la scarpetta” to clean your bowl πŸ˜‹

Golden Beet bread & marigold β€œbutter” ❀️

An ingredient of the fabulous bread here is vegetable juice. Just as the menu rotates seasonally (and in between as well), the bread gets infused with new characteristics on a regular basis. A visual delight this time was tearing off a chunk to discover that the crumb had taken on the hue of a yellow curry from the essence of the golden beet πŸ₯°

Starting from the outside, you have a shell constructed of two parts: a crispy chip made from celery root and a second layer of pickled rutabaga. Braised hen-of-the-woods mushroom and julienned strands of watermelon radish make up the yummy filling πŸ˜‹

The green dollop is tofu mixed with chervil and tarragon oil with a dusting of dried miso powder πŸ‘

The best beverage I had last year was this warm drink. It’s a vegan brew made from the essence of sugar kelp and four types of mushrooms finished with a spicy hint of ginger. Served as the opening course for the holiday menu last month, this umami-packed concoction was enough to compensate for the arrival of chilly weather πŸ€—
