Beef-less Stew – potatoes, broth of toasted skins, yeast, marrow

There was so much umami flavor that I did not miss the meat 🥩

Quail, lacquered and smoked. Served with grilled Parker House rolls 🤤👏😋

A delicious course eaten mostly with hands. Always fun to see @josiekittypaw slip into gustatory nirvana over the rolls 😆
