Not so good pictures but super good food. St. Pierre with sherry vinegar & brown butter (pic 1). One week aging makes a big difference. Looked so simple but just down right delicious. The sauce had just right level of acidity and heavenly butter aroma.

Aged and Marinated Pigeons (pic 2) with incredible semi raw texture and a concentrated sauce made from chicken & duck oil. Wow, so so good. The sauce was so awesome I mopped everything with extra bread.

Cep and black rice risotto with coffee foam, the aroma of butter and mushroom (pic 3). The flavor and umami was off the chart 🤯. Another clean plate.

All the other dishes were incredibly good as well, including lobster soup with brown butter that was light in body but rich in flavors; kakiage of coriander and corn with black garlic soy sauce and apple purée was unexpectedly well matched; crazy dessert - tempura of red wine poached fig, french red beans mixed with lemon - insane crust and great ending.
