My first visit was about 9 months ago and the restaurant was still young (so were chefs) at that time. Head chef @avenlau and another young chef @jestonchua are alumni from the old Belon and had worked in other kitchens. I waited until my 4th visit over a span of 9 months before I feel it is the right time to share my thoughts.
It is very usual and reasonable for young chefs who have just taken up the role of head chef or opened their own restaurant to make dishes based on where they came from because that is what they have learnt and graduated. Even for many established chefs it takes them a long time, and many need several rounds of restaurant changes to eventually find their direction and identity.
I think Batard is now in such good trajectory and direction. Their dishes are consistent and well executed, and most importantly they are showing more of their own originality and identity, which I am glad to see and excited to try more.
It is not easy to find young chefs who have the dedication and right attitude to stay in this very harsh industry as chef work is always extremely demanding. It is even more important to keep them during pandemic time. I think we should support young chefs who ultimately will become the future of our dining scene. They need guidance and positive criticism to help them to improve, as well as encouragement and acknowledgment to lead them to the right path and success.
For me I am very happy to see how much Batard has evolved in a relatively short time and I will continue to follow closely on the growth of these chefs.
