Recommended bowl: IEKEI w/ negi
Yokohama style IEKEI is made from tonkotsu soup, chicken oil and shoyu tare. Noodles are supplied by Sakai Seimen, same as most shops with Yoshimuraya roots. Topped with green negi sourced from the Setouchi area of Japan, white rice and takuan pickles on the side. The master trained at a few different ramen shops in Yokohama for over 30 years before becoming the first apprentice at the well known IEKEI shop Suzukiya. Open since August, 2020.
