Yakimen Tsurugi is known for its 'yakimen’ or pan-fried noodles served in bowls of ramen with soup. The creamy double soup is a rich and toothy broth containing tonkotsu combined with a vegetable pottage made from potatoes. The medium thick noodles are first boiled and then pan-fried with oil to a nice crisp before being thrown into the bowls.
