Recommended bowl: Authentic Sapporo
Open since January 2019, Yadoya is run by master Dōya-san, who comes from Hokkaido. Keeping it true to his roots, he serves up an authentic Sapporo style miso ramen. The soup is made from chicken, pork and gyokai, and is combined with a homemade miso. The Sapporo tamagomen style noodles are ordered and shipped in straight from Hokkaido via Kobayashi Seimen. Topped with ginger, sansho peppercorns and yamakurage (mountain vegetable), pickled in shoyu koji.
