Recommended bowl: Hirako niboshi
A highly ranked shop serving up various varieties of ramen and tsukemen since 2013. Offerings include ramen with niboshi or ika-niboshi (dried squid) soups, as well as thick tori paitan tsukemen and lighter shio chicken tsukemen. Premium ‘Nihon-Ichi” brand soy sauce is used in the shoyu tare. The noodles are supplied by Mikawaya Seimen. A second branch opened in Hachioji in 2015, but this remains the flagship.
