Recommended bowl: Tsubame-Sanjō style

This shop specializes in Niigata Tsubame-Sanjo style inspired ramen. Clear niboshi-chicken soup and pork backfat are topped with chashu, diced onions and special iwanori from Hyōgo Prefecture. Medium thick wavy noodles (compliments of Mikawaya Seimen) with tsukemen also available and recommended. Run by Gamushara president Hasunuma-san, who is originally from Niigata and has a handful of ramen shops in Tokyo and overseas. Open since July 7, 2020.
