Recommended bowl: Handmade & hand-pounded
A shop high on many ramen freaks' radar, the bowls here have been well received since the shop debuted in 2018. The recommended shoyu (or shio) ramen comes with a clear chicken and gyokai based soup containing sababushi, katsuobushi and niboshi. As the shop name suggests, the noodles are house-made temomi style, pounded by hand to order and made using wheat from Hokkaido and Saitama. Extra toppings include three types of chashu, ajitama and wontons. Customers can also opt for niboshi ramen, tsukemen and mazesoba. Run by master Suzuki-san, who trained at the legendary shop Rokurinsha, now operates with the help of his wife. Considered by many one of the better slurps in Saitama Prefecture.
