Recommended bowl: Glorious pork tsukemen
Tonkotsu gyokai tsukemen. Rich, fishy, porky soup, with medium-width noodles. The pork ‘aburi’ chashu topping is a must order — the master hits the pork belly slices with a burner to let the fat sizzle a bit. After you finish the noodles you can get a small ball of rice to mix with the leftover soup. There are some other items on the menu but almost everyone goes for the tsukemen.
