Recommended bowl: Golden paitan
Noroma is known for its golden tori paitan soup, which takes eight hours to make followed by two hours of straining. The soup is then flash-frozen, put in the refrigerator and aged one day. This process helps keep a clean taste and maintain maximum umami. Noodles are house-made using 100% domestic wheat. The chashu is cooked low-temperature 'teonchōri' style, then marinated in special tare sauce for two days. The chashu is not sliced until each order comes in, as this keeps the overall quality of each slice higher. Run by master Takaoka-san, considered by many one of the best in Nara. Since 2012.
