Recommended bowl: 12-hour soup

This local shop is quite popular among the regular customers and devout followers. The bowls here are traditional Miyazaki style ramen, made with a rich tonkotsu soup, shoyu tare and burnt lard. The soup itself contains pig heads and water simmered for 12 hours. The noodles are supplied by local purveyor Yataibone Seimenjo. The pork chashu is marinated in shoyu tare for a whole day. Toppings include your standard bean sprouts and green negi. Free condiments like spicy takana pickles and sesame seeds available as well. Run by master Miyoshi-san, who trained for ten years at the famous local shop Ramen Man. Open since 2010.
