Recommended bowl: French influence

Run by master Motoki Matsunaga, who trained in French cuisine before learning how to make ramen on his own. He now runs a handful of shops in the Kansai region, including his flagship Menroku in Osaka, open since 2016. Like the flagship, this Kyoto shop specializes in duck ramen, served via a light, clear soup. The stock is made from fresh Kisshū brand ducks from Wakayama prefecture, which are sourced directly from the farm and arrive within 24 hours. The noodles are housemade using wheat imported from Germany. Topped with duck chashu, radish sprouts and budō sansho. Open since December 2018.
