Recommended bowl: Tomita-inspired

Master Shigeta-san first dined at the legendary shop Tomita in Matsudo, Chiba, then was inspired to open his own shop. Self taught, he never trained at another shop. Like Tomita, the bowls of tsukemen here contain a rich tonkotsu gyokai soup with house-made noodles. The soup is topped with fish powder, negi and yuzu. No MSG. The special comes with two types of pork chashu, one salted and one smoked like bacon. Previously Shigeta-san ran his shop in a different location, relocated to the current spot in 2015.
