Recommended bowl: Local favorite

This legendary local shop serves an original style of tonkotsu, derived from Tamana style. Smooth pork bone soup is topped with thinly sliced pork chashu, homemade roasted and fried garlic, negi and nori. Noodles are special ordered. The master here is self taught. Ranked one of the better shops in Kumamoto prefecture for many years.
