Recommended bowl: OG Hiroshima tonkotsu

The original Hiroshima style tonkotsu shoyu ramen, which is buttery, milky golden, medium rich, made with pork bones, chicken carcasses, vegetables and shoyu tare. Thin straight noodles are provided by Harada Seimen, a local purveyor in business over 70 years. Topped with bean sprouts, negi and pork chashu. Opened in 1957, by master Hara-san, who purchased the name and recipe from the original master Tsuruda-san. Prior to the shop opening, Tsuruda-san served ramen from a yatai (street cart) named Youki. The original recipe is still being used, unchanged for over 60 years. Now with several branches in Hiroshima, all family run. Original Eba flagship open 4:30pm-midnight.
