They say no trip to Xi'an is complete without a visit to the insitutional Defachang Dumpling Restaurant that opened in 1936. There are multiple floors and you're served a banquet with up to 180 varieties. Each set of dumplings we ate was filled with various meats, vegetables, and seasonings. The cooking methods varied from steaming, boiling, pan-frying, deep frying, to roasting. Although everything was beautifully made and presented, the food itself tasted very average.
